While I was away on vacation, my husband took care of my garden. He did a wonderful job. He likes things big…very big. So I came home to 2 zucchini weighing a combined total of over 10 pounds!

This zucchini will need to be grated, with the seeds removed (they will gave gotten too hard). Perhaps I will save some seeds for next year’s garden.
Here’s what I made:
Day 1 – a new recipe – Zucchini Tomato Polo (this one will go in the next cookbook)
Day 2 – Rye Zucchini Sourdough Bread

Day 3 – Zucchini Lasagna – an adaptation of skinnytaste.com/zucchini-lasagna/. To please my hungry males, I did 2 layers of zucchini noodles and 2 layers of pasta noodles.

Day 4 – Zucchini Quiche

Day 5 – Persian Zucchini & Eggplant Stew (Khoresh Kadoo v Bademjun (but my photo refuses to upload)
Day 6 – Pasta with Grilled Vegetables – broccoli, cauliflower, pepper, and of course, zucchini!
And with that, 1 of the 2 zucchini is finished.
Plans for the second, larger, one include:
- Zucchini, Corn, and Egg Casserole
- Zucchini with Lemon and Garlic
- Persian Zucchini Omelet
- And much more.
And next, my tomatoes are ripening….
