Honey Cake – Exploring Mom’s Recipe Box #11

To symbolize this, we eat foods made with, or dipped in, honey. I’ve posted over the years about our various apples dipped in honey, honey challah, honey chicken…you get the theme. This year, I found a honey cake recipe in my Mom’s recipe box. My name is on the card, but I don’t remember making honey cake, little less one worthy of being shared. But who knows, maybe I did?

The recipe looked intriguing. My favorites parts are the strong coffee and the instruction not to serve it for 24 hours so that the flavor of the honey develops – hmmm.

The verdict was that everyone really, really liked this. In fact, one cake did not make it to dinner, it was eaten before I could stop them. Oh well.

Is it a dessert cake? I am not so sure, it is more like a zucchini bread. A slice to go with a cup of coffee or tea in the afternoon, or with cream cheese for breakfast – delicious!
