Cornmeal Crusted Tilapia and Lemon Garlic Spinach – Exploring Mom’s Recipe Box #5 – sort of


“Sort of” Why, sort of? Well, these were two recipes my mom got from college-aged Andrea (me) in the early 80’s, and they were in her recipe box. You can see the different handwriting, she had me write my recipe cards for her. Her handwriting is much neater.

This is how I typically cook my greens and how I used to make tilapia, so there is nothing new and exciting in these cards. So, I figured I would make these together. I did not make 3 pounds of spinach, I used 1 bound of baby spinach and reduced the rest of the recipe accordingly.

To add some more zing, I served a preserved lemon & yogurt dressing on the side (Einat Admony’s recipe). It went really well with the fish. We ate this, of course, with rice.

As for the BIG QUESTION: Will I make this again? Of course, they are simple, fast, classics.

    Not to mention versatile too! I believe you could use another white fish for this one.

    1. Absolutely. You could also use this on fish to put in a po’ boy or other fish sandwich.
