Zucchini Chocolate Chip Bread


There is always debate in my house over what to put in the zucchini bread.  Ali and I like raisins and nuts, Arielle and Emily like raisins, no nuts, Lauren likes nuts, no raisins.  But today, Arielle – my official zucchini bread baker – is home and we decided to try a new approach – chocolate chips!  People put chocolate chips in banana bread, so why not zucchini bread?  We reduced the amount of sugar in the batter to balance the sugar in the chips.  This one earned high marks all around!

Zucchini Chocolate Chip Bread

3 eggs (from Farmer Kim)

1 cup canola or other vegetable oil

1 1/2 cups white sugar

2 cups grated zucchini (from the garden)

2 tsp vanilla

1 1/2 cups all-purpose flour

1 1/2 cups whole wheat flour

3 tsp cinnamon

1 tsp baking soda

1/4 tsp baking powder

1 tsp salt

1/4 cup chopped walnuts (optional)

1/2 cup mini chocolate chips

Preheat oven to 325F.  Grease 2 loaf pans.

In a large bowl, beat eggs until light and fluffy.

Mix in oil and sugar.  Stir in zucchini and vanilla.

Arielle grates as Chopin looks on over her shoulder.

Combine flour, cinnamon, baking soda, baking powder, salt.  Stir into the egg mixture.  Add nuts and chocolate chips, fold in.

Divide evenly among pans.

Bake for 70 minutes or until done.  Enjoy!

Makes 2 loaves.

  1. I guess I’d prefer raisins and nuts… but a chocolate zucchini bread is a great idea, too!
