Farmers Market Roasted Pepper Salad


I love when I go to the farmers market and something totally new is there.  Such was the case when the pepper roasters were there.  What a wonderful smell!  They were roasting all different types of peppers right there!

Even though the hot peppers were calling to me, I bought the bag of mild peppers as a nod to my 10 year olds heat sensitivity. Look at how beautiful they were…

I used them various ways, but I loved them tossed into a salad with tomatoes, cucmbers and onions.  All it needed was some lemon juice.

We ate it both as a salad and as a topping for chicken cutlet. Yum!

Farmers Market Roasted Pepper Salad

2 large heirloom tomatoes, from the farmers market

3 roasted peppers, from the farmers market

½ sweet onion, from the farmers market

1 Persian cucumber, from the farmers market

Lemon juice

Directions

Chop all the vegetables into small pieces.

Combine and mix, add lemon juice to taste.

Enjoy!

Serves 4.
