Blackberry Jam


I have been told that all you need to grow blackberries in Oregon is to disturb the soil and wait. That seems to be true along the riverfront near our condo.

Luckily, there is a walking path within arms reach of the plants.  So, on a recent morning walk with my dog, I brought my handy dandy quart jar. It was not very long before the jar was filled.

I then posed the question to my friends on Facebook…”what should I do with the berries?”  Responses came in with pie, cobbler, some things I had made, such as blackberry cheesecake and blackberry bread, and jam.  The jam suggestion won out, and I have been enjoying blackberry jam with breakfasts and lunches since. img_2979

Blackberry Refrigerator Jam

4 cups blackberries

1 cup sugar

1/2 tsp ground cinnamon

1/2 tsp lemon juice

Directions

In a medium saucepan, mash the blackberries with a potato masher. Stir in the sugar until juices form.

Turn on the heat to medium-high and bring the berries to a boil, stirring often, until jam is thickened, this will take about 15 minutes. Stir in cinnamon and remove from the heat and allow the mixture to cool. Transfer the jam to a container. Cover, and refrigerate until chilled. Stir in lemon juice.

Keep refrigerated and enjoy!
